Chicken Cacciatore

Ingredients
2lbs chicken breasts, sliced
4 tomatoes, chopped
2 peppers, chopped
4 cloves garlic, chopped
Olive oil
Salt
Pepper
2 (28oz) cans crushed tomatoes
Directions
In a large skillet or pot
sauté chicken that has been sprinkled with salt and pepper in a bit of olive oil. When one side is browned flip chicken. Once chicken is mostly cooked through, add tomatoes, peppers and garlic. Let this cook for about 5 minutes, stirring occasionally. Add crushed tomatoes and let simmer for 30 minutes stirring occasionally. Serve over your favorite starch.
*I served this over a combination of mashed potatoes and butternut quash. Chicken Cacciatore is great over pasta, rice, quinoa, mashed potatoes, mashed butternut squash or any starch really.
